Ideal Storage Temperature: 45-50 degrees F. 7-10 degress Celsius Fact: Green peppers normally turn red in color as they mature. The higher sugar content in a red pepper will generally make them sweeter than a green pepper. Chill injury may occur if peppers are stored at temperatures lower than 45-50 degree F. or 7-10 degrees Celsius.
