Roasted Potatoes and Red Peppers




1/2 cup chopped Sunfresh Farms red pepper
2 lbs diced Sunfresh Farms yellow potatoes
1 tbsp olive oil
1 1/4 tsp salt
3/4 tsp paprika
1/2 tsp minced garlic
1/8 to 1/4 tsp cayenne pepper
1/4 tsp thyme



Combine potatoes and olive oil in a baking pan. Sprinkle with seasonings and toss to coat well. Roast at 450° for about 35 minutes, stir every 15 minutes.  A great side dish to chicken!
