Roasted Potatoes and Red Peppers
|1/2 cup||chopped Sunfresh Farms red pepper|
|2 lbs||diced Sunfresh Farms yellow potatoes|
|1 tbsp||olive oil|
|1 1/4 tsp||salt|
|1/2 tsp||minced garlic|
|1/8 to 1/4 tsp||cayenne pepper|
Combine potatoes and olive oil in a baking pan. Sprinkle with seasonings and toss to coat well. Roast at 450° for about 35 minutes, stir every 15 minutes. A great side dish to chicken!
